Vegan Snickerdoodle Energy Bites

Add chocolate chips, toasted pecans, or shredded coconut to switch up these cookie-inspired energy bites from The Simply Real Health Cookbook. What you need:½ cup almond butter3 tablespoons coconut flour3 tablespoons vegan milk1 tablespoon cinnamon, plus 1 tablespoon for rolling1 tablespoon maple syrup1 teaspoon vanilla extractWhat you do:In a medium bowl, combine all ingredients and mix well. In a small bowl, add remaining 1 tablespoon of cinnamon.
Form into 18 balls, then roll each in cinnamon. Store in refrigerator until ready to eat.
